Avocado Kiwi Green Smoothie: A SIBO Breakfast Recipe

Avocado Kiwi Green Smoothie

Ingredients: serves 1 

  • 1 cup spinach or kale leaves, washed
  • 1/2 cucumber, chopped
  • Juice of 1/2 lemon
  • 1 teaspoon grated ginger
  • 1 ripe kiwi, chopped (leave the skin on for extra fibre and bowel support!)
  • 1/4 ripe avocado, peeled and pitted
  • 1/2 – 1 cup water as needed for desired consistency
  • Ice cubes (optional)
  • Sprig of fresh mint (optional)

Instructions:

Prepare Ingredients: Wash the spinach or kale leaves thoroughly. Chop the cucumber into smaller pieces. Juice half a lemon and grate the ginger. Chop the ripe kiwi. Peel and pit the avocado.

Blend: In a blender, combine the spinach or kale, chopped cucumber, lemon juice, grated ginger, chopped kiwi, and avocado.

Add Liquid: Pour in 1/2 to 1 cup of water depending on how thick you prefer your smoothie. You can adjust the amount based on your desired consistency.

Blend Until Smooth: Secure the lid on the blender and blend the ingredients until smooth and well combined. If you prefer a colder smoothie, you can add a handful of ice cubes before blending.

Taste and Adjust: Once blended, taste the smoothie and adjust the flavor as needed. You can add more lemon juice for acidity or more ginger for a spicy kick.
