Do you love granola but can’t tolerate oats? This paleo granola is gut-friendly, gluten-free, low FODMAP, SIBO-friendly, grain-free and low sugar.
Finding breakfast options whilst on a restrictive diet (such as when treating SIBO or carrying out a gut healing protocol) can be tricky. This paleo granola is ideal to make in batches and store for the rest of the week ahead, so you have a quick and tasty breakfast (or snack).
SIBO-friendly Paleo Granola:
Ingredients: (makes 10 servings)
- 140g whole or flaked almonds
- 125g pecans
- 130g dried cranberries
- 60g pumpkin seeds
- 50g shredded coconut
- 35g flax seeds
- 35g sunflower seeds
- 35g hemp seeds
- 1/2 tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 3 tbsp coconut oil — melted
- 4 tbsp honey
- 1 tsp pure vanilla extract (optional)
Method:
- Preheat oven to 190° C and line a baking sheet with baking paper.
- In a large bowl combine almonds, pecans, cranberries, pumpkin seeds, coconut, flax seeds, sunflower seeds, hemp seeds, salt, cinnamon, and nutmeg.
- In a small bowl, whisk together oil, honey, and vanilla.
- Pour the liquid mixture over the seeds and toss to coat. Spread granola on a prepared baking sheet in an even layer.
- Bake until golden and nuts are toasted, approximately 30 minutes.
- Let cool completely on the baking sheet before storing it in a resealable airtight container.
- Serve with almond milk, almond yoghurt or coconut yoghurt.
