Low FODMAP Raspberry Coconut Chia Pudding

Indulge in the low FODMAP and gut-friendly goodness of Raspberry Coconut Chia Pudding! This recipe makes a healthy breakfast, snack or dessert for those on a low-FODMAP or SIBO-friendly diet.

This recipe combines the richness of creamy coconut milk with the nutritious powerhouse, chia seeds, and the natural sweetness of juicy raspberries. Chia seeds are an excellent source of fibre, which helps promote healthy bowel movements and prevent bloating. These tiny seeds are also loaded with omega-3 fatty acids, known for their anti-inflammatory properties, further contributing to a happy gut.

Ingredients: serves 1

  • 2 tbsp (30g) chia seeds
  • 150ml of coconut milk
  • 100ml almond milk
  • 1 tbsp maple syrup
  • 20 raspberries
  • 5 strawberries

 

Method:

  1. Blend almond/coconut milk and strawberries/raspberries in a blender.
  2. Pour mixture into a bowl and add maple syrup and chia seeds.
  3. Cover bowl with plastic film and refrigerate until set (approx. a couple of hours).
  4. Enjoy!
