Low FODMAP Raspberry Coconut Chia Pudding

Indulge in the low FODMAP and gut-friendly goodness of Raspberry Coconut Chia Pudding! This recipe makes a healthy breakfast, snack or dessert for those on a low-FODMAP or SIBO-friendly diet.

This recipe combines the richness of creamy coconut yogurt with nutritious chia seeds and the natural sweetness of juicy raspberries and strawberries. Chia seeds are an excellent source of fibre, which helps promote healthy bowel movements, which in turn helps to prevent bloating. These tiny seeds are also loaded with omega-3 fatty acids, known for their anti-inflammatory properties, further contributing to a happy gut.

Ingredients: serves 1

  • 2 tbsp (30g) chia seeds
  • 240ml (1 cup) almond milk
  • 3-4tbsp coconut yoghurt
  • 1 tbsp maple syrup
  • 20 raspberries
  • 10 strawberries

 

Method:

  1. Blend almond milk, coconut yoghurt and strawberries/raspberries in a blender.
  2. Pour mixture into a bowl and add maple syrup and chia seeds.
  3. Cover bowl and refrigerate until set (approx. 1-2 hours).
  4. Enjoy!
